No, enscript doesn't do that automatically.

It seems like your printer somehow always chooses the wrong tray for
PostScript jobs.

Are you sure you configured Windows to use the PostScript driver for the
printer? The default Windows driver is PCL, not PostScript.
If it *is* PostScript, you can print to a file from one of those Windows
programs and see what's different in how the output begins. AFAIK,
PostScript output from Windows begins with "^D%!" string instead of the
usual "%!", for example; maybe that is the reason for the different tray.
